If you get this far with Audacity, arecord probably won't work either, but this is the command line I use to record:

arecord -D hw:1,0 -B 3000000 -c 2 -d 2820 -t wav -f S24_3LE -r 48000 |buffer >file.wav


Do you have a recent version of the ALSA driver (cat /proc/asound/version)?  If it's older than 1.0.21 you could try upgrading your kernel.

Otherwise a USB capture device might be an idea, here are some options: http://wiki.audacityteam.org/wiki/Recommended_sound_devices 
I think the iMic should be supported with Linux too.
